BODEGAS DIONISOS, the smallest winery in one of the largest wine growing regions in the world (Castille-La Mancha, Southern Spain), is a traditional family-run eco winery: Our wines are produced in a historic winery - the site, the agricultural buildings and the wine presses originate from the 18th century. At the end of their ageing process the wines ripe in the absolute quiet of an old rock cove, which was hewn out of live rock 9 meters deep by the ancestors of today´s winery owner. The beautiful premises are listed as a site of historic interest, and they are the region´s last example of a traditional bodega, where the wine cellars and the residential house of the owner are in the same complex.of buildings.
The wines produced by BODEGA DIONISOS are not only highly qualitative wines – thanks to their naturalness they also stand out by their wholesomeness. The grapes we use for making our wines are certified organic by SOHICERT (Ökocert).
Our vineyards (about 35 ha altogether) are worked with traditional methods, some of them with consideration of the „cosmic calender“ and the moon cycles, as it was done in agriculture for ages.
We use only organic manure, and grape picking is done manually, thus ensuring a diligent choosing of the grapes.
The processing of the grapes also follows traditional methods: Fermentation is triggered by the yeasts on the grapes and takes its natural course without any additives.
Our wines achieve their suppleness and complexity by ageing in earhtenware amphorae (the histroric „tinajas“) and/or in oak casks .
And certainly also thanks to the commitment and passion of a wine-maker, who is dedicated to his bodega and is really close to the wines in every moment of their creation.
Dionisio de Nova, agricultural engineer and wine-maker in the third generation,produces natural wines full of nuances, thus providing an alternative to the so-called „culture“ of huge wine-making factories whose products can be found in every super market all over Europe.
Unlike the all too pleasent mass-produced wines, which are rated by white-collar inspectors and taste one like the other, the small eco winery BODEGAS DIONISOS produces wines of a quality which can come about only as a result of harmony with nature, diligent manual work and real dedication to the „nectar of the Gods“. This is one reason why Dionisio de Nova, who received his calling to be a wine-maker already with his own christen name, named his winery after the ancient god of wine DIONISOS.
